I pick up that elote corn all the time. Usually multiple bags. I usually saute onions and garlic with olive oil and then I throw in to medium to large size zucchinis that have been chopped up and then I throw the corn on top and I let it all together mixing it with a lid on until the zucchini are soft and then I add one tablespoon of mayonnaise to the top and a whole lot more parmesan cheese. I'm telling you that stuff is the bomb. You can spice it up with a little bit of chili powder or chili flakes if you like it a little spicier. You can also add a little cilantro to the top and squeeze of lime if you like. That can be eaten as a meal by itself or with a side of rice If you want a meatless meal or as a side to some roasted chicken.
