Wonderful and not just for Diabetics!! I usually do baby spinach, watercress, strawberries, blackberries, tiny beets, cherry tomatoes, and a little feta cheese. I struggled terribly while living in the States – most ready salads were heavy with grated processed cheese, thick dressings, croutons (all the additions which do nothing for a healthy diet!)
A salad without a dressing (even a simple vinaigrette) is just sad, sorry.

I make a very similar salad but instead of Arugala I use baby bok choi and sprinkle on cilantro microgreens.
try arugula + grapes with some balsamic vinegar and olive oil.
