  5. You can eat all the parts of the beet (the root, stem and greens). The greens make a great salad and you can taste all the minerals. If you boil all the parts (20 minutes), add a little salt and apple cider vinegar….delicious. The stems melt in your mouth. I have hypothyroidism and was happy to discover beetroot as a substitute for spinach which I no longer eat because it blocks iodine absorption by my thyroid due to the hypothyroidism.

I never liked it cause I thought it was yucky and now i am in my early 30s I drink and smoke a lot so need balance if i want to reach 50 Its time to grow up meaning I have to buy and eat that beetroot, my mum is gonna be so proud.
