Inspired by Cucina Botanica, I discovered this wonderful alternative tiramisรน which can be prepared as a full vegan or as, allow me the term, partial vegan dessert.

A typical tiramisรน is made by using Savoiardi biscuits or sponge fingers but there arenโ€™t in a vegan version. Therefore you can choose other biscuits which are 100% plant based and very neutral in taste.

It is a quite heavy dessert! ๐Ÿ˜ฌTo make it lighter, you can avoid the chocolate layer on the top ๐Ÿ˜‰

Letโ€™s get started..

๐Ÿ“ Ingredients (5 portions)

10 cookies (vegan) with a neutral flavor (Savoiardi / Sponge fingers for semi-vegan version)
4 cups of coffee
150 g of soaked and drained cashews<br />80ml vegetable drink (I used soy drink)
40 g of agave syrup
1 pinch of vanilla extract
20 g of sunflower oil

Topping:

60 g of dark chocolate
40ml soy milk (or other vegetable drink)
Bitter cocoa powder to cover (optional)

๐ŸฅฃPreparation

โœจPrepare 4 cups of coffee ( I use a classic Italian Moka)
โœจBreak in crumbs the biscuits on the bottom of each glass or container used for the tiramisรน
โœจpour a bit of coffee in each glass and press gently the biscuits creating a bottom layer
โœจmix the cashews, agave syrup, 80 ml of vegetable drink, sunflower oil and vanilla extract with a mixer till you get a smooth cream
โœจplace the cream in each glass and create a second layer
โœจplace the glasses in the fridge
โœจmelt the chocolate in bain-marie
โœจadd the rest of vegetable milk and stir till the chocolate is liquid and smooth
โœจtake the glasses out of the fridge and pour the chocolate over as third layer
โœจoptional: sprinkle some cocoa powder on top
