SALAD INGREDIENTS:

For Layers:
3 small beets or 2 medium beets (grated using medium setting)
2 large carrots (grated using medium setting)
1 small onion (diced into small pieces)
3 small ripe avocados or 2 medium avocados (cubed)
2 Raw Vegan Nori sheets (torn apart into small pieces ~1cm squares)
Dill or any other herb for garnish

For Mayo:
1 cup unsalted cashews (soaked for ~2 hours in cold water)
2 medium garlic cloves
Juice of 1 medium lemon
Water (just enough to cover the cashews)
Pinch of salt to taste

INSTRUCTIONS:
– Blend all mayo ingredients until creamy and until consistency resembles the mayo and set aside (Note: use less water first and add more water little by little if needed)
– Choose an air-tight container for your salad (approximately 9x7in.)
– Lay out avocado chunks first and slightly pat them with a spatula to even the layer out
– Add diced onion
– Add torn nori sheets
– Add a layer of freshly made mayo and smooth it out
– Add grated carrots
– Add another layer of mayo and smooth it out
– Add grated beets
– Add one last layer of mayo and smooth it out
– Garnish with dill or your choice of herbs
– Refrigerate for at least 2 hours or overnight
– ENJOY!
